Tava Baingan (Roasted Eggplant)

A recipe that really make you love Brinjal (Baingan). A different version where it is cut into thin slices and then roasted with spices in a frying pan or tava. A really healthy recipe as brinjal is known to control blood cholesterol and in Ayurveda it is good for people suffering from arthritis, kidney stone or other urinary tract infection. This version of cooking Brinjal make it crispy , soft inner and a spicy mouth watering treat. Be ready for quick and easy delicacy. So lets start the recipe. Yum

Ingredients:
Big sized Purple Eggplant(bharta Baingan)-1
All purpose flour (maida)-2 tbsp
Spices:
Turmeric powder-2 tsp
Red chilly powder-2 tbsp
Coriander powder-2 tbsp
Garam masala-2 tsp
Dried mango powder (amchur)-2 tbsp
Salt to taste
Vegetable oil-2 tbsp
Chopped coriander- a small bunch
Method:
Cut the eggplant in thinly sliced rounds.Sprinkle-1/2 tsp salt and leave for 10 minutes.
Take all purpose flour in a round plate.Add 2tbsp water and make a thin paste.
Take all spices in a round plate.Mix all together.
Take one round of eggplant,dip it in flour paste from both sides.
Coat this round in spices mixture from both sides.
Heat a non stick tava or pan, pour 1/2 tsp oil on it.
Transfer dipped in flour and coated in masala eggplant round on pre heated tava.

Likewise repeat the same process with remaining round.

Cook from one side for 5 minutes with closed lid.
Open lid and flip all rounds.Let them cook for another 5 minutes.
Remove from heat and sprinkle chopped coriander leaves.
Serve with chapati,sandwich bread or over pizza.
